Chocolate Chip Oreo Cookies

We celebrate Friday at the office with something we call "Cookie Fridays".  I made these beauties a few weeks ago and have been told I need to make and bring them again and soon.  They did not last very long at all.   I found this recipe over at Picky Palate and could not resist trying them out! She has so many yummy looking things!!  The addition of the Oreos makes them taste a bit like cookies and cream, especially since I used the Double Stuffed Oreos.  One final word DELICIOUS!!
Chocolate Chip Oreo Cookies
from Picky Palate
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar
2 egg
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
16-18 broken pieces Oreo Cookies
1 1/2 cups chocolate chips

Preheat oven to 350 degrees.
Cream butter, and sugars until well combined. Add egg and vanilla until mixed well.
Slowly add the flour, baking soda and salt to wet ingredients then stir in oreos and chocolate chips until just combined.
 With a medium cookie scoop; scoop onto a lightly greased cookie sheed and bake for 7-9 minutes or until cooked, but still soft. Let cool on baking sheet for atleast 1 minute.
YUM!!

Just a quick update if you read my post here, you know we were anxiously awaiting an envelope to tell us where my son would go on his mission...Well it arrived on Saturday and he is going to the Ecuador, Guayaquil North Mission.  He is very excited!!

Where in the World is he Going?? Giveaway #3

Call me CRAZY..but there's not cookie involved in this post today, but we are still celebrating!!
At my house we are frantically wating for this large envelope to arrive in the mail..

He will be preaching the gospel for 2 years somewhere in the world.

Bakery Style Chewy Chocolate Chip Cookies

My good friend asked if I would bring some cookies to a family event.  I wanted something a little different than the normal.  These were soft, chewy and did remind me of a bakery style cookie only with a homemade flair!!
Bakery Style Chewy Chocolate Chip Cookies
Adapted from Food.com
3/4 cup butter, melted and cooled until warm
1 cup brown sugar
1/2 cup white sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
2   cups flour
2 tablespoons flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips ( semi-sweet, milk chocolate or any combination)
Preheat oven to 325°F.
Spray cookie sheets with cooking spray.
Mix butter and sugars with with a mixer until blended and smooth, add egg, yolk & vanilla. Beat egg for 3 minutes. 
The slowly add flour, soda and salt and mix until just combined.
Stir in chips.
Roll dough into balls or use cookie scoop to drop on cookie sheet
Bake for 10-12 minutes. You want them light colored.  Allow to cook on cookie sheet for at least one minute to help maintain the chewy texture.
Delicious! I came home with an empty plate.  Good thing I saved a few behind!!

Summer's Best Corn Chowder ♥ Recipe

Corn Chowder | A Veggie Venture
A simple corn chowder recipe, packed with our favorite fresh summer vegetables like onion, carrot, red pepper, potato and sweet potato and of course, the soup's real star, kernels of sweet corn. As bright and colorful as crates of fresh vegetables lined up at the farmstand. Perfect for CSA members because the corn chowder recipe uses so many fresh vegetables, all at once.

In winter, big pots of simmering soup are a given, hearty bowls to warm us from the inside out. But what about summer soup, do you make summer soup? Summer soups are just different, aren't they? Lighter and livelier, more likely to be all about the fresh vegetables that are so alluring during these heady summer months.

For me, summer just isn't summer without at least two must-make summer soup recipes, Tomato Gazpacho, the chilled tomato summer soup that turned me into a seasonal eater, and this corn chowder recipe, bits of summer vegetables and sweet kernels of corn in a milky broth. It's takes a little chopping, we do love to cut vegetables, don't we? :-)

I like this corn chowder served warm, not hot, the better to really taste the individual vegetables, bite by bite. It's similar to Finnish Summer Soup, one of my very oldest recipes. Add shrimp and scallops and bits of fresh tomato for Summer Seafood Chowder, another summer chowder.

Maple Chicken with Grapes | Healthy Maple Chicken with Grapes Recipe

Maple Chicken with Grapes Recipe
Recipe by Cecille Esperanza

Ingredients: serve 4 to 6
8 boneless chicken thighs, cut in half
½ teaspoon salt
2 tablespoon olive oil
1 onion, chopped
3 tablespoons maple syrup
1 tablespoon liquid seasoning
2 tablespoons water
1 cup seedless red grapes

Procedures:
1. Season chicken with salt
In a skillet, heat oil and sauté onion. Add chicken and brown on both sides. Reduce heat, cover skillet, and cook about 10 to 15 minutes or until chicken pieces are tender and juices run clear when pierced with a fork.

2. In a bowl, combine maple syrup, liquid seasoning, and water. Pour into skillet and add grapes simmer until sauce thickens slightly, about one minutes

3. Transfer chicken to a platter and spoon sauce over chicken before serving.

Quick Garlic Parmesan Rolls

You've all heard me before talk about how much I LOVE BREAD!! Don't get me wrong there is nothing better than the homemade kind, but once it awhile the frozen dough like Rhodes makes a good, quick and easy fix for that craving!  I found this recipe over at The Cutting Back Kitchen and knew I had to try it out! The addition of the seasoning in this recipe make it so delicious.  I've actually got the rolls raising right now to make a second time.
Quick Garlic Parmesan Rolls
from The Cutting Back Kitchen
1 stick (1/2 cup) butter
4-5 cloves garlic, minced or pressed
2 teaspoons Italian Seasoning (I didn't use this.)
1/2 cup grated Parmesan cheese
20 rise and bake frozen rolls (I use Rhodes)

 Place the butter, garlic, and Italian seasoning in a microwave-safe dish and heat until melted. Whisk in the Parmesan cheese.

Place the frozen dough balls in a large bowl. Drizzle the buttery cheese mixture over the dough and then toss quickly to evenly coat the dough in the butter and cheese. Place the dough in a 9×13″ pan and allow to rise until doubled (follow the package directions).
Bake according to package directions until the rolls are evenly golden on top.
So simple and delicious!!
Gonna use them to make some hamburger sliders tonight!!

Bagel Chips

Oh wow! This is an amazing recipe and one that is so easy.  My cousin Rhonda came up with it when she had some day old bagels that she did not want to waste.  Me on the other hand kept buying bagels so I could make some and my family kept eating all them.  So my bagels weren't "day old" but the chips still turned out delicious and the whole family enjoyed them!! Photo
Bagel Chips

5 large " day old"  bagels
 1 cup butter or margarine
 1 tsp garlic (or 1 1/2 teaspoons garlic salt)
 1/4 tsp onion powder
 1/4 cup Parmesan cheese

Preheat oven to 400 degrees.
Cut bagel strips into bite size pieces and put in large bowl.

 Mix spices into butter and dizzle over bagel strips. Stirring gently until bagel slices evenly covered. Bake for 20-25 minutes until golden brown to brown.   Check and stir at each 10 minute mark. Do not under bake you want them crisp.
Let cool! (My daughter and I couldn't wait so we ate some warm)
After they are cool strore in a sealed bag.
