Luscious Lemon Bars

My family loves lemon bars and I tend to forget that fact until we are able to taste one at an event.  I finally broke down and surprised them in more ways than one.  These bars are so delicious and the huge surprise is that they are also light.. that's right, it tastes awesome with less calories!! A total homerun in my book!!
Luscious Lemon Bars

Crust:
 1/4 cup vegetable oil
 1/4 cup granulated sugar
 1/4 tsp. salt
 1 cup flour
 1 1/2 tsp. fat free milk

Filling:
 1 egg
 1 egg white
 1 cup granulated sugar
 2 tsp. grated lemon peel
 3 T. fresh lemon juice (about the juice of 1 lemon)
 2 T. flour
 1/2 tsp. baking powder

Drizzle:
 3/4 cup confectioners sugar
 1 T. fat free milk
 1/2 tsp. vanilla
 1/4 tsp. grated lemon peel

Heat oven to 350. Oil bottom of 8-inch square pan lightly.
For crust, combine 1/4 cup oil, sugar and salt in large bowl. Beat at medium speed of electric mixer until well blended.  Add flour and milk.  Stir with spoon until well mixed and  crumbly.  Spoon into pan.  Press evenly onto bottom.

 Bake at 350 for 15 minutes.
 For filling, combine egg, egg white, sugar, lemon peel, lemon juice, flour and baking powder in medium bowl.  Beat at high speed for 3 minutes.  Pour over hot baked crust.
Bake at 350 for 25 minutes or until light golden brown.  Loosen from edge while still warm.  Cool completely.
  For drizzle, combine the ingredients in a small bowl.  Drizzle over top.  Allow to stand before cutting into bars.
YUM!!
 Just the perfect amount of sweetness!
*I doubled the recipe and used a 9 x 13 pan. 
*The 8 inch pan will make about 2 dozen bars each bar is approximately 100 calories each.  Not bad for a sweet craving...that is if you can keep yourself to only eating one! Now that is the tough part!!

Snickers Popcorn

If you are in need of a quick sweet for your "sweet" today, this is a good one!! So delicious and very addicting.  I found it over at Walking on Sunshine which is an amazing blog.  Lots of delicious food and inspirational posts!!

Snickers Popcorn

1 cups of unpopped popcorn
1 cup butter
2 cups light brown sugar, packed
1 tsp. salt
1/2 cup light corn syrup
1 teaspoon vanilla
1 tsp. baking soda
30 "Fun Size" Snickers bars, coarsely chopped
3 oz. milk chocolate, melted (optional)

Pop your popcorn. Sift through and remove all the unpopped kernels.
Over medium heat, boil butter, brown sugar, salt, vanilla  and corn syrup for 5 minutes.
Remove from heat and stir in the baking soda.
I used my LARGE roasting pan.
Pour this mixture over your popcorn and stir to coat evenly.
Bake your popcorn in a 200 degree oven for 1 hour and 15 minutes stirring every 15 minutes.
Remove from oven and stir in your coarsely chopped Snickers. Return to the oven for another 5 minutes so the Snickers can melt into the popcorn. The candy does not have to completely melt.
Remove from oven and drizzle with the melted chocolate
Let cool before packaging or transferring to an air-tight container.
She packaged hers up all cute. We ate it straight from the bowl and loved it!!

Butterfinger Bites

When I saw this recipe over at Talented Terrace Girls, I was immediately intrigued.  I love Butterfinger candy bars. The list of ingredients in this recipe truly surprised me, so you all know I just had to try it out for myself.  They were so delicious!! Took a little bit of time to make, but so worth it.
Butterfinger Bites
From Talented Terrace Girls
Box of Cheezits or any other box of cheese crackers
peanut butter
chocolate chips (I used milk chocolate)

Spread some peanut butter on one side of a cracker. Grab another cracker and place on top.
Dip in melted chocolate and cover completely.
 Set on waxed paper on a cookie sheet. Then put them in the freezer for
 5-10 minutes to get the chocolate to set up.
Oh YUM!!
The only issue I had with this recipe is my family ate half the box of Cheezits before I could get these made, but now they are begging for more!!
