Bagel Chips

Oh wow! This is an amazing recipe and one that is so easy.  My cousin Rhonda came up with it when she had some day old bagels that she did not want to waste.  Me on the other hand kept buying bagels so I could make some and my family kept eating all them.  So my bagels weren't "day old" but the chips still turned out delicious and the whole family enjoyed them!! Photo
Bagel Chips

5 large " day old"  bagels
 1 cup butter or margarine
 1 tsp garlic (or 1 1/2 teaspoons garlic salt)
 1/4 tsp onion powder
 1/4 cup Parmesan cheese

Preheat oven to 400 degrees.
Cut bagel strips into bite size pieces and put in large bowl.

 Mix spices into butter and dizzle over bagel strips. Stirring gently until bagel slices evenly covered. Bake for 20-25 minutes until golden brown to brown.   Check and stir at each 10 minute mark. Do not under bake you want them crisp.
Let cool! (My daughter and I couldn't wait so we ate some warm)
After they are cool strore in a sealed bag.

Homemade Pop Tarts

I've been wanting to make these for a long time! Finally decided that no better time than the present. 
Actually very simple and so much better than the ones in the box.  They did not last very long at my house. 
Homemade Pop Tarts
pie crust dough (I used the boxed refrigerated dough)
jelly or jam

Frosting:
1 cup powdered sugar
1 teaspoon vanilla
1-2 Tablespoons milk
2 Tablespoons butter
pinch of salt

Preheat oven to 325 degrees.
Cut your dough into squares.
Add a small amount of jam in the middle of a rectangle.
Spread the jam just a little bit and top with another piece and seal with a fork around all the edges.
Place on a lightly greased cookie sheet.
Bake for 15-18 minutes or until lightly browned. Start checking at 12 minutes.
Remove from pan. Mix up the frosting.
Soften butter, mix in powdered sugar, 1 Tablespoon milk, vanilla and pinch or salt.
If needed add the additional 1 Tablespoon milk and food coloring if desired. (it will be a little runny)
Spread across the top of the pop tarts and add a few sprinkles if desired.
If you can hold the kids off long enough, let the frosting set up a bit.
Thene serve and amaze your family!!

PB & Chocolate Blast Chex Mix

Do you enjoy a little crunchy and sweet treat?  This is a great quick and easy fix!! Very delicious!!
PB & Chocolate Blast Chex Mix
adapted from General Mills
6 cups corn or rice Chex cereal
1 cup white chocolate baking chips
1 cup peanut butter chips
1 cup plain M&M's

1. Line a cookie sheet with foil or waxed paper.  Pour 3 cups of cereal and 1/2 cup M&M's in a medium bowl. Melt the white chocolate chips in the microwave for abour 1 minute or until chips can be stirred smooth.  Pour melted chips over the cereal and stir to coat evenly.  Spread mixture onto the cookie sheet.
2. Repeat the above using the peanut butter chips.
Let mixture cool to set ( it may need a few minutes in the fridge.) Break apart and store in a airtight container.

Nesting Chicks Treat

I wanted something fun to give my preschool kids as a treat this week. My own kids thought they turned out cute.  They were simple and delicious!! Nest year I will let the kids make their own!!
Nesting Chicks Treat
adapted from food.com
2 cups chocolate chips
1/3 cup peanut butter
4 cups chow mein noodles,break them up a bit
M&M's, Peeps, jelly beans or other candy for garnish as desired.

Place chocolate chips in a microwaveable bowl, microwave on high for 1 minute and then stir.  Continue to heat in 20-30 second intervals until the chocolate can be stirred smooth.  Stir in the peanut butter and then add the chow mein noodles and stir until they are completely covered.
Spoon desired amount (I used about 1 tablespoon) onto waxed paper. Spread out a bit to look like a nest.
Add the candy to garnish the nests. Press into the nests before chocolate sets.
Chill until the chocolate has hardened.
Simple and Easy!!
Can't wait to see the reaction of my students!!
*You could substitute pretzel sticks for the noodles.

Lemon Buddies

My family loves Muddy Buddies so when I saw this recipe I had to mix things up a bit and try it out.
They were delicious and so simple to make!!  A nice change from a chocolate mixture.  It's like a lemon bar snack mix!!
Lemon Buddies
adapted from General Mills
9 cups Corn or Rice Chex Cereal
1 1/4 cups white chocolate chips
4 teaspoons grated lemon peel
2 Tablespoons fresh lemon juice
2 cups powdered sugar
In a large bowl measure out the cereal and set it aside.  In a microwavable bowl, microwave the chips, lemon peel, lemon juice uncovered on high for 1 minute.  Stir. Microwave about 30 seconds or longer or until the mixture can be stirred smooth.  Pour mixture over cereal, stirring until evenly coated. Pour into a gallon resealable bag.  Add powdered sugar to the mixture. Seal bag and gently shake until well coated. Spread on waxed paper to cool. Store in an airtight container
Watch out they are addicting!!

Snickers Popcorn

If you are in need of a quick sweet for your "sweet" today, this is a good one!! So delicious and very addicting.  I found it over at Walking on Sunshine which is an amazing blog.  Lots of delicious food and inspirational posts!!

Snickers Popcorn

1 cups of unpopped popcorn
1 cup butter
2 cups light brown sugar, packed
1 tsp. salt
1/2 cup light corn syrup
1 teaspoon vanilla
1 tsp. baking soda
30 "Fun Size" Snickers bars, coarsely chopped
3 oz. milk chocolate, melted (optional)

Pop your popcorn. Sift through and remove all the unpopped kernels.
Over medium heat, boil butter, brown sugar, salt, vanilla  and corn syrup for 5 minutes.
Remove from heat and stir in the baking soda.
I used my LARGE roasting pan.
Pour this mixture over your popcorn and stir to coat evenly.
Bake your popcorn in a 200 degree oven for 1 hour and 15 minutes stirring every 15 minutes.
Remove from oven and stir in your coarsely chopped Snickers. Return to the oven for another 5 minutes so the Snickers can melt into the popcorn. The candy does not have to completely melt.
Remove from oven and drizzle with the melted chocolate
Let cool before packaging or transferring to an air-tight container.
She packaged hers up all cute. We ate it straight from the bowl and loved it!!

Butterfinger Bites

When I saw this recipe over at Talented Terrace Girls, I was immediately intrigued.  I love Butterfinger candy bars. The list of ingredients in this recipe truly surprised me, so you all know I just had to try it out for myself.  They were so delicious!! Took a little bit of time to make, but so worth it.
Butterfinger Bites
From Talented Terrace Girls
Box of Cheezits or any other box of cheese crackers
peanut butter
chocolate chips (I used milk chocolate)

Spread some peanut butter on one side of a cracker. Grab another cracker and place on top.
Dip in melted chocolate and cover completely.
 Set on waxed paper on a cookie sheet. Then put them in the freezer for
 5-10 minutes to get the chocolate to set up.
Oh YUM!!
The only issue I had with this recipe is my family ate half the box of Cheezits before I could get these made, but now they are begging for more!!

Cookie Dough Truffles

One last sweet I have to share this holiday season because these are my favorite!! I could seriously eat the whole batch!! Good thing my sweet friend Mikayla made and shared them with me.  I finally begged her for the recipe because it is a keeper!! It gives you the perfect excuse to eat cookie dough!!
Cookie Dough Truffles

 1/2 c butter, softened
3/4c packed brown sugar
1 teaspoon vanilla
2 C flour
1 can (14 ounces) sweetened condensed milk
1/2 cup miniature semisweet choc chips
1-1/2 pounds dark chocolate candy coating, coarsely chopped (or milk chocolate)
 
In a large bowl, cream the butter and brown sugar until light and fluffy. Beat in vanilla. Gradually add flour, atlernating with milk, beating well after each addition. Stir in the chocolate chips. Shape into 1-inch balls; place on waxed paper-lined baking sheets. Loosely cover and refrigerate for 1-2 hours or until firm.
In a microwave bowl, melt candy coating; stir until smooth. Dip balls in coating; allow excess to drip off; place on waxed paper-lined baking sheets. Refrigerateuntil firm, about 15 minutes. If desired, remelt remaining candy coating and drizzle over candies. Store in the refrigerator. Makes about 5 dozen.

Hot Chocolate on a Stick

I LOVE hot chocolate and was instantly intrigued when I saw these over at Lark's Country Heart (Lots of delicious thing over there. It's a great blog!)What a brilliant and cute gift! They turned out darling and were really pretty easy to make.  I used them for handouts for a lesson and most of them did not make it into milk..the girls ate them on the way out the door!!
Hot Chocolate on a Stick
1/2 C. Heavy Cream
1 (14oz.) Sweetened Condensed Milk
3 C. Semi Sweet Chocolate Chips *(You can mix this up too, 2 C. semi./1C. Milk )*
1 (4 oz.) Bar of Unsweetened Chocolate
Optional: 1 Tablespoon flavoring (use any flavor you like)
Dash of Cinnamon
In a medium size sauce pan mix together the cream and condensed milk.
Stirring often until it begins to "steam". (DO NOT BOIL)
Remove from heat and add all the chocolate, stir just enough to cover the chocolate.
Set it aside for 10-15 minutes. While you are waiting lightly spray your 9x5 loaf pans with cooking spray(makes 2 pans). After the time is up you will then return it to the heat on low/med whisking it until all pieces of the chocolate are melted. Stir in your flavoring and cinnamon.
Pour 1/2 the mixture in each pan. Spread evenly and smooth the top.
Here is the "hard" part....now you have to let it set up for at least 6 hrs.
Or just do what I did and make this up before going to bed and let it set overnight.
Remove it from the pan and cut into 1 inch pieces.  6 x 3 (18 pieces per/pan).
Before I cut mine I dipped the tops of marshmallows in some melted chocolate and then dipped it in crushed candy canes.   Let chocolate set up.  Then push your sticks into the marshmallows.
Then push the stick into each piece of the chocolate mixture.
Now simply package them up and attach a tag telling them to add their Hot Chocolate in a stick to 6-8 oz. warm milk and stir until dissolved. 
Here's the copy of my tags if you want to use them. 
Right click and save to Word or something similar.
Loved this recipe! The only thing I am going to try on the next batch is use 2 cups milk chocolate chips and 1 semi sweet or maybe even all 3 milk chocolate.  I used vanilla flavoring, but the choices are endless.  Mint, orange, raspberry..etc.

Caramel Nut Chex Mix

This is the perfect fix for that sweet crunchy craving.  It is delicious and easy to make.

Caramel Nut Chex Mix
8 cups Chex Cereal (I used equal amount of Rice and Corn Chex)
2 cups nuts (I used almonds and cashews)
1/2 cup light corn syrup
1/2 cup butter
2 teaspoons vanilla
1 cup brown sugar
Preheat oven to 250 degrees.
Put chex and nut in a large bowl. Combine the corn syrup, butter, vanilla and sugar in a saucepan.  Over medium high heat, stirring constantly bring to a boil and boil for 1 minute.  Pour over the cereal mixure and stir to coat.  Spread on to a cookie sheet and bake for 45 minutes.  Stir a couple times while baking.  Cook and store in an airtight container.

Funfetti Cake Batter Fudge

Today's recipe is courtesy of my sweet little sister who is turning out to be an amazing cook!! She says the fudge is easy and tastes like a homemade cake batter.  Each piece is really sweet, but everyone loved it!

Funfetti Cake Batter Fudge

3/4 cup sweetened condensed milk
1 12 oz. package white chocolate chips
3 tsp Vanilla Extract
1 tsp Almond Extract
Rainbow Sprinkles
Pour milk and white chocolate into a microwave-safe bowl. Heat for 2-3 minutes, or until white chocolate is almost completely melted. DO NOT OVERHEAT. Stir until completely blended, melted, and smooth.
Immediately add vanilla and almond and combine thoroughly. Add a handful or so of rainbow sprinkles and fold in quickly, because they will melt (and if they are stirred for too long they’ll turn the fudge an ugly muddy color).
Transfer to an aluminum-foil lined 8×8 inch baking pan. Let set at room temperature or in the refrigerator.
 Once set, cut into cubes. Store leftovers in an airtight container in a cool place.
