Ingredients:
  • 4-5 pound beef brisket
  • Salt
  • 1-2 Tbsp olive oil
  • 3 large onions, sliced
  • 5-6 garlic cloves, minced
  • 1 sprig thyme
  • 1 sprig rosemary
  • 3-4 bay leaves
  • 2 cups of beef stock
  • 2-3 large carrots, peeled and cut into 1 1/2 inch pieces
  • 1 Tbsp mustard (optional)
Procedures:
Prepare cooking chest. On one side of the skirt should not be a fat, whatever you want. If there are any large pieces of fat, cut it off and discard. Large pieces of fat will not be able to do completely. With a sharp knife, fat in parallel lines, about 3/4-inch apart. Cut through the grease, no meat. Repeat in the opposite direction to make a crosshatch pattern. Skirt salt well and let stand at room temperature for 30 minutes.

You will need an oven-proof, heavy-bottomed pot with a cover, or a Dutch oven, which is wide enough to hold the breast roasted with a little space for onions. Pat dry and place the breast with fat side down, in the pan and place over medium-high heat. Cook for 5-8 minutes, slightly hot, until the fat side is nicely browned. (If the roast seems to be cooking too quickly, reduce heat to medium. Want a steady sizzle, not a guarantor furious.) Turn the breast and cook for a few minutes more to brown the other side.

When the breast has browned, remove it from the pan and set aside. There must be a couple of tablespoons of rendered fat in the pot, if not, add a little olive oil. Add the chopped onion and increase heat to high. Sprinkle some salt over onions. Saute, stirring frequently, until onions are lightly browned, 5-8 minutes. Add garlic and cook 1-2 minutes more.

Move the onion and garlic to the sides of the pot and nestle inside the skirt. Add the beef broth and herbs tied. Bring the broth to a boil. Cover pot, place the pan in the oven to 300 ° F and cook for 3 hours. Gently turn the brisket every hour to cook evenly. After 3 hours, add carrots. Cover the pot and cook for at least 1 hour, or until the carrots are cooked through and the chest is falling-apart tender.
When the chest is falling-apart tender, take the pot off the stove and remove the breast to a cutting board. Cover with foil. Remove and discard the herbs.

At this point, you have two options. You can serve as is, or you can make a sauce with the fat and some of the onions. If you serve as is, skip this step. To make a sauce, remove the carrots and half of the onion, set aside and cover with foil. Pour the remaining ingredients into the pot in a blender and puree until smooth. If desired, add 1 tablespoon of mustard to the mix. Place in a small saucepan and keep warm.

Serve the brisket, sliced ​​1/4-inch to 1/2-inch, against the grain of the meat, onions, carrots and gravy. Serve with mashed potatoes, roasted or cooked egg noodles or polenta.

Ingredients:
Lechon Paksiw | Quick Pork Recipe Lechon Paksiw Recipe Tips
1 pound Lechon, cut in cubes
1/4 cup Vinegar
1/8 cup Soy Sauce
1 cup Water
1/2 head Garlic, minced
1 piece Bay leaf
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 tablespoon Sugar
1/2 cup Lechon Sauce

Cooking Time : 25 minutes

Procedures:
1. Put the Lechon in a pot, add garlic, vinegar, soy sauce, bay leaf, sugar and water. Bring to a boil.
2. Reduce heat and simmer for 15 minutes until the skin is soft piglet and the liquid has reduced by half.
3. Add the lechon sauce, salt and pepper and cook for another 10 minutes. Serve

Armadillo Potatoes

  Growing up in Idaho, the potato harvest is such a big deal we always got 2 weeks off of school for it.  Once you were old enough you worked in the potato harvest, which was hard, dirty and often boring work, but it provided a great paycheck!! I have been on a potato craze lately.  Maybe I am missing the potato harvest time..who knows!  But just a warning there will be a few potato posts in the near future. These potatoes where delicious and fairly simple to make.  Who cannot like the name!!
Armadillo Potatoes
Preheat oven to 425 degrees.
Wash the desired amount of potatoes.
Cut them in slices being careful not to cut all the way though, you want the bottom still intact.
Brush with melted butter or olive oil and season with salt and pepper.
*Use any seasoning you like on potatoes.
Bake for 40-45 minutes. 
I drizzled a little more butter on them about half way through the cooking process.
It was a good way to get the kids to eat the skin and all!
Some of my family dipped the slices in Ranch, others in ketchup and some just ate them plain.
YUM!!

Simple 'Sweet Potato' Potato Salad
Today's healthy sweet potato salad recipe, made with a bare minimum of mayonnaise, just enough to hold the salad together. Great crunch from celery, a touch of sweetness from honey and a few chopped dried cranberries. When made with vegan mayonnaise, not just vegan, "Vegan Done Real".

Two things to know about this sweet potato salad.

It's really a classic potato salad, except that it's made with sweet potatoes instead of potatoes. Why don't we do this more often?
It's "barely dressed" with hardly any mayonnaise, just enough to hold it all together. This makes the taste and texture all about the softness of the sweet potatoes, the crunch of the celery and the "tiny bit" of sweetness from the dried cranberries. Why don't we do this more often?

But make that three.

You want to make this salad, you really do. It's so simple and somehow, it just works. Besides, you know, don't you? that the sweet potato is the favorite vegetable for Thanksgiving? Happy Election Day and a Cookie Failure!

Happy Election day!! Hopefully by the end of today we will know who our next president will be.  I am excited that today will end the negative ads everywhere. In honor of the big election I have told you these past couple weeks that I was on a mission to try the presidential cookie bake off recipes out.  I succeeded in the trying part. I successfully made Laura Bush's Texas Cowboy Cookies (just for old time sake and they sounded delicious.), Ann Romney's M&M Cookies and finally found the mint chips to make Michelle Obama's Mama Kaye's White and Dark Chocolate Chip Cookies .  That is where unfortunately the success ended.  For this is what they looked like:
Trust me they look better than they tasted.  
Now for the confession...I'm sure it wasn't the recipe it was the person who made the recipe's fault.  
The recipe calls for one stick of  butter-flavored solid vegetable shortening, which I personally do not like to use.  So thinking I'm smart thought I could just substitute real butter in it's place..WRONG!!
Obviously the butter flavored solid vegetable shortening makes all the difference.  
I'm considering this an learning experience and my kids loved the Andes mint pieces.  Although they told me I should of just let them eat them out of the package.   So FACT is my attempt at recreating the presidential cookie bake off and letting my family decide which was the winner FAILED!! 
The bright side is perhaps in four years I will get the chance to take up the challenge again!
For today I will enjoy my freedom to cast my own ballot!

Ann Romney's M&M Cookies

In keeping with the election spirit and my "foodie" personality (along with my love for cookies) decided to try out Ann Romney's cookie recipe she submitted for the Presidential Cookie Contest.  The kids were a little skeptical when I said the words "gluten free" which I explained meant no flour in this case.  They quickly got over the scare and ate them up!! My son even hid what was left the next morning! I took a few to work and they loved them also. These cookies were soft and yummy!
Ann Romney's M&M's Cookies 
Makes 3 dozen cookies 
1 cup granulated sugar 
1 cup packed light brown sugar 
1/2 cup (1 stick) unsalted butter, softened 
1-1/2 cups crunchy peanut butter 
1 tablespoon light corn syrup 
3 eggs 
1/2 teaspoon vanilla extract 
4-1/2 cups old-fashioned rolled oats 
2 teaspoons baking soda 
6 ounces chocolate chips 
2/3 cup M&M's candies (I used 1 cup)

Preheat oven to 325 degrees. 
In a large bowl, cream sugars, butter, peanut butter, and corn syrup with an electric mix until well combined. 
Add eggs, one at a time, beating well after each addition. Beat in vanilla. 
In a separate bowl, mix together oats and baking soda. Stir oat mixture into peanut butter mixture until combined, then mix in chocolate chips and M&M's. 
Using a standard-size ice cream scoop, drop dough onto baking sheets.
 Bake at 325 degrees for 18 minutes or until lightly browned.  (I used my cookie scoop and baked for 12-14 minutes)
 Cool for 2 minutes on baking sheets, then transfer to a wire rack to cool completely. 
These were delicious, but personally in a contest against Laura Bush's Texas Cowboy Cookies, I would of chosen the Cowboy Cookies.  Now to get the ingredients and try Michelle Obama's cookies out!
