Ingredients (Tikoy)
4 packed cups glutinous rice
1 1/4 cup sugar
1 cup water + extra for soaking

Procedures:
1. In a bowl add rice and enough water to cover the rice. Soak for 24 hours.
2. Drain the rice, leave in a colander for a few minutes.
3. Place rice and sugar in a sturdy blender or food processor and then mix. Add 1 cup water gradually and process until mixture resembles a pancake.
4. Place in a bowl lined coat Gay poured over the batter and steam for 1 hour.
5. Remove from steamer and then let it cool, once cooled refrigerate overnight.
6. Remove from the pan and cook over the decision.

Ingredients (Fried Tikoy)
1/2 cake tikoy / nian gao, sliced in 1 cm thick cuts
3 eggs, beaten
oil

Procedures:
1. Place a pan over low heat half then add a small amount of oil for frying pan
2. Dip a piece of Tikoy in the beaten egg mixture and then each piece pan once browned on one side flip, when cooked remove from the pan and throw it in a paper towel lined plate.
3. Do the same with the rest of the slices then serve

1/2 can condensed milk
2 eggs, beaten
1/2 cup butter, melted
1/2 cup grated cheddar cheese
1 cup brown sugar
1 bottle macapuno (Coconut Sport)

1/2 large can coconut milk
1/2 can condensed milk
2 tbsp flour
2 tbsp sugar
2 egg yolks, beaten

Procedures:
  • In a large bowl, combine all cake ingredients and mix well yuca until even in consistency.
  • Pour cassava a greased cookie sheet, spread on top and bake macapuno in a preheated oven at 180 º C for 45 minutes.
  • While cooking in a pot mix topping ingredients, mix well until even consistency. Simmer until the sauce thickens.
  • Remove cake from oven and pour cassava sauce on top, distributing evenly and place back in the oven and bake at 220 ° C for 15 minutes or until top becomes golden.

Pansit Malabon Recipe | Quick Healthy Pansit Palabok Recipe
Ingredients (Palabok Noodles)
500g thick rice noodles
Water

Ingredients (Palabok Sauce)
150g crab meat
150g crab fat
1/2 cup Smoked fish, flaked
3 tbsp annatto powder
fish sauce
3 tbsp cornstarch
2-3 cups of water
4 cloves garlic, minced
1 red onion, minced
oil

Ingredients (Palabok Toppings)
adjust amount to your hears desire
Shrimps, with skin on
Squid, sliced into rings
Mussels, with shell on

Pork crackling (chicharon), crushed
Spring onions, chopped
Hard boiled eggs, sliced
Fried garlic
Lemon, sliced

Procedures:
  • 1. In a pot, boil water and cook rice noodles and place according to package directions.
  • 2. Once pasta is cooked, drain and then set aside.
  • 3. Boil shrimp, mussels and calamari in 2 cups of water to the sauce. Once cooked keep fluid drainage, place the fish aside.
  • 4. Shell the shrimp and reserve. Crush with a mortar shells to extract the juice, place beaten shells and their liquid in a muslin cloth or fine sieve over a bowl. Run water used to boil the crushed shells and empty it into a container. Set aside the liquid.
  • 5. Shell the mussels and set aside.
  • 6. In a blender mix crab meat, crab fat, used to boil water, annatto powder and fish sauce, mixing at low speed for one minute. Remove from blender and then put aside. 7. In a saucepan, add the oil and saute the garlic and onion.
  • 8. Add the crab meat mixture and shredded mixed smoked fish.
  • 9. In a separate bowl mix the cornstarch with a little water, dilute until free of lumps and then add to the pan.
  • 10. Bring the sauce to a boil and simmer until sauce thickens, add water if the sauce becomes too thick. Turn off heat.
  • 11. Place noodles in a large bowl pour sauce over and toss to evenly distribute the sauce to the noodles.
  • 12. Put the noodles in a large bowl then top with cooked seafood, pork cracklings, spring onions, eggs and fried garlic.
  • 13. Squeeze the lemon up.

Ten Minute Chili and Del Monte Southwestern Tomato Kick-Off Giveaway

All of you who know that I am a HUGE sports fan.  This time of the year is especially exciting and I don't want to spend game time in the kitchen preparing meals.  So I was so excited to find this Chili recipe.  It is perfect for game day or any crazy day for that matter. I used the new Del Monte Petite Cut Tomatoes with Green Chilies.  QUICK and YUMMY!!
10 Minute Chili
from Del Monte.com
1 can (14.5 oz.) Del Monte® Petite Diced Tomatoes with Green Chilies (or chipotle chilies)
1 can (8 oz.) Tomato Sauce
1 pound  ground beef
1/2 cup diced onions
2 Tablespoon chili powder (plus or minus to your taste)
1 can (15 oz.) kidney beans or pinto beans, drained and rinsed
Salt and pepper to taste

Brown meat, and onions in a large skillet.  Stir in the chili powder.  Add undrained tomatoes, tomato sauce and beans.  Cook over medium heat for about 5 minutes or until heated through.  
We like to serve with shredded cheese, sour cream and tortilla chips.

Two-Can Ten-Minute Homemade Tomato Soup, made from scratch in just ten minutes without the 'weird' ingredients in canned tomato soup. Another healthy soup recipe from A Veggie Venture.
Today's easy homemade soup recipe: Tomato soup made from scratch in just ten minutes. No "weird" ingredients like canned tomato soup and lower in calories, too.

So I suspect that purists won't consider this homemade soup. After all, I didn't till the soil to grow the tomatoes and I certainly didn't toil over a hot stove canning summer tomatoes, all to toss together an easy, steaming bowl of tomato soup during the cold and damp of a Midwestern winter.

But here's why for me, Two-Can Ten-Minute Homemade Tomato Soup not only qualifies, it rocks. Let's look at the ingredient lists.

Diced Tomatoes: Tomatoes.*
Tomato Sauce: Tomato Concentrate, Salt, Onion Powder, Garlic Powder, Citric Acid, Natural Flavors, Dried Bell Pepper.*
* Caveat: It took careful examination of several labels to find diced tomatoes and tomato sauce without sugar.

Red Velvet Crinkle Cookies

Recently I had my first experience with a red velvet cookie at a restaurant.  I was instantly hooked and had to try to recreate them.  They turned out fabulous and my coworkers said they were better than the ones we had bought!  They are a little messy to make, but oh so worth it!!
Red Velvet Crinkle Cookies
adapted just a bit from Duncan Hines
6 Tablespoons butter
1/2 cup powdered sugar
1/2 teaspoon cornstarch
1 box Red Velvet Cake Mix
2 eggs
1/2 -1 cup white chocolate chips

Preheat oven to 375°F. Melt butter; set aside to cool. Place powdered sugar and cornstarch in shallow dish. Mix with a fork to blend.
Place cake mix, cooled butter and eggs in a large mixing bowl. Mix by hand until well blended and a dough forms. (*Mixing by hand is the key to this recipe!)
Form dough into 1-inch balls and roll in powdered sugar. Place on a lightly greased baking sheet about 2 inches apart.
Bake, 1 sheet at a time, in center of oven for 9 to 11 minutes or until set. Cool 1 minute.
Delicious! You would never guess it was a cake mix base!
*The original recipe calls for 1 cup powdered sugar and 1 teaspoon cornstarch.  I doubled the recipe and didn't use all of it.
Beautiful and delicious!! HUGE hit with everyone!

1/2 cup minced onion
1 cup sour cream
1 garlic clove, minced
1/4 cup butter
1 lb ground beef
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
canned mushroom stems and pieces, 2-3 cans, drained
1 (10 3/4 ounce) can cream of mushroom soup
1 (12 ounce) bag egg noodles, cooked

Procedures:
  • Saute onion and garlic in butter over medium heat.
  • Add ground beef and stir chestnut flour, salt, mushrooms and pepper and cook 5 minutes, then add the soup. Cook 10 minutes.
  • Stir in sour cream until heated. Serve over noodles.

Ingredients:
3 green onions with tops, chopped
1/4 cup butter or 1/4 cup margarine, melted
1 lb fresh mushrooms, sliced
1/4 cup dry white wine
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic powder
2 teaspoons Worcestershire sauce

Procedures:
  • Saute green onions in butter until tender.
  • Add remaining ingredients and cook, uncovered, over low heat 30 minutes or until mushrooms are tender.

Apple Pie Bites

I recently saw something like this, but there was not recipe to go with it.  So I created my own.  Three words to describe it..QUICK, SIMPLE and DELICIOUS!! Huge hit with the family!  They were also cute. Top with a bit of ice cream and it is perfect!
Apple Pie Bites
1/2 cup sugar
2 teaspoons ground cinnamon
2 cans crescent rolls
3 Tablespoons butter
2 medium apples, cut into 8 wedges

Preheat oven to 375 degrees.
In a small bowl, combine sugar and cinnamon.  Set aside 1 Tablespoon of the mixture.  Unroll the crescent rolls.
Brush with 2 Tablespoons butter and sprinkle with remaining sugar mixture.
Place a slice of apple in the large end of the roll.
Close the ends over the apple slice and roll up.  Try to seal ends the best you can.
Place on a lightly greased cookie sheet.  
Melt remaining 1 Tablespoon of butter and sprinkle with the 1 Tablespoon of sugar mixture you set aside.
Bake for 12-15 minutes or until lightly brown and set up.
Top with some ice cream and serve!

Chicken Tostadas

This was fairly quick to make and delicious.  A big hit with all the family members.  I allowed each of them to add their own toppings to the chicken and cheese mixture.  I will be making these again soon.
Chicken Tosadas
8-10 small corn tortillas
2 Tablespoons olive oil (you may need more or less)
2 cup grated cheddar cheese
3/4 cup onion, diced small
1 teaspoon chili powder
2 garlic cloves, minced
2 cups cooked chicken, torn or shredded
 salt and ground pepper
1 Tablespoon. plus 2 teaspoons lime juice
1 head romaine lettuce, shredded
1-2 tomatoes,  chopped
1-2  avocado, halved, pitted, peeled, diced small
fresh cilantro, for serving (optional)

Preheat the oven to 400 degrees. Lightly brush both sides of tortillas with olive oil and place on a rimmed baking sheet. 

Bake until golden and crisp, about 10 minutes. 
In a large skillet, heat 1 teaspoon oil over medium-high. Add half the onion and cook until softened, about 3 minutes. Add chili powder and garlic and cook until fragrant, 30 seconds. Add chicken and 1/4 cup water and season with salt/pepper. Cook stirring frequently, until chicken is warmed though and water is almost evaporated, 2 minutes. Stir in 2 teaspoons lime juice and remove from heat.
In a large bowl, combine lettuce and 1 Tablespoon lime juice, season with salt/pepper. Toss well to coat.
 Divide cheese and chicken mixture among tortillas and return to oven. 
Bake until cheese is bubbling, about 3 minutes. 
 Top each tortilla with lettuce, tomato, avocado, remaining onion and cilantro if desired.
I like to serve with sour cream and salsa.
DELICIOUS!!
