In our experience, here is one of our best stir fry recipe that we can share with you today. This is a very yummy dish to most. You can also omit the snow peas and instead use broccoli florets. If your family loves beef and beef strips, this recipe will surely be loved and repeatedly requested. Learn how to do it. It is easy, quick and very sumptuous for a simple quiet dinner at home. We call this dish the EMERALD STIR FRY WITH BEEF. But others even substitute the beef with seafood and still enjoy the recipe. It can be prepared in 42, minutes; where preparation is 30 minutes and the actual cooking is 12 minutes. This recipe yields 4 servings.
INGREDIENTS:
¼ cup Mirin or semi sweet white wine, like Riesling¼ cup orange juice2 tablespoons rice vinegar¼ teaspoon red pepper flakes¼ cup low sodium soy sauce¼ cup water2 tablespoons canola oil8 ounces beef round steak, sliced into ¼ inch thick strips3 cloves of garlic, peeled minced2 cups fresh snow peas (about 6 ounces)1 large bunch broccoli (1 ¼ pounds) trimmed and cut into small floretsA bunch of asparagus (about 1 pound), trimmed and sliced into diagonal 2 inch pieces2 cups (about 8 ounces) frozen shelled edamame1 ½ teaspoons cornstarch dissolved in ¼ cup warm water1 teaspoon sesame oilPROCEDURE:
Combine the Mirin or the white wine, the orange juice, the soy sauce, the rice vinegar and red pepper flakes and water in a small bowl. Mix until they are smooth. Set aside.
In a large wok or skillet (about 14 inches wide), saute the pan, heat 1 tablespoon of the canola oil over medium high heat. Add the beef and stir fry until just browned for about 2 minutes that will be 1 minute on each side for a uniform cooking. Then transfer the beef to a clean plate and set aside.
Heat the remaining canola oil over medium high heat. Add the garlic and cook until it is fragrant for about 30 seconds. Add the snow peas, broccoli florets, the asparagus and the edamame. Raise the heat to medium high, and stir fry for another 3 minutes until the veggies are slightly softened.
Then add the Mirin-soy sauce mixture and cook, stirring until the edamame are cooked and the asparagus are crisp tender for about 4 minutes more. Let the sauce coat the vegetables by continues stir frying.
Then add the beef back to the skillet and the dissolved cornstarch and stir fry to coat and mix with the vegetables. Continue stir frying until the mixture thickens slightly and the beef is heated through enough for about 2 minutes more.
Drizzle with sesame oil and serve immediately while it is hot.
Great with the steam cooked white rice.
