Baked Sour Cream Ranch Chicken

I had a craving for fried chicken, but I don't like the grease that it involves. My family LOVES Ranch dressing. We could eat it with almost everything.  I also wanted something a little different than the usual chicken so this is what I came up with.  It was moist and really flavorful.  Made for some great leftovers!!


Baked Sour Cream Ranch Chicken
makes about 6 chicken breasts (I made 18 chicken tenders)
1 1/2 cups bread crumbs
1/4 to 1/2 cup grated Parmesan cheese
1 packet Hidden Valley Ranch dressing mix
1/2 cup sour cream ( you may need a little more) I used light sour cream.
Preheat oven to 425 degrees.
Mix bread crumbs, Parmesan cheese and Ranch mix together in a bowl.  Put sour cream in a separate bowl.
Lightly coat the chicken with the sour cream and roll in the bread crumb mixture. (do not over coat with the sour cream.) Be prepared to get your fingers messy, but it is well worth it.
Place chicken pieces on a greased cookie sheet.

Bake for 20-25 minutes or until cooked through.
Enjoy hot or cold!!
*You could substitute the bread crumbs with crushed Ritz crackers.
