Vegetable Minestrone recipes


Ingredients:
1 1/2 cups uncooked rotini pasta
4 cups tomato juice
1 tbsp dried basil
1/4 tsp pepper
1 tsp salt
1 cup carrots, sliced
1 cup chopped celery stalks
1/2 tsp oregano
1 cup sliced mushroom
2 crushed garlic cloves
1/2 cup diced onion
28 oz of diced tomatoes in juice
4 cups vegetable broth
Shredded Parmesan cheese for topping

Directions:
1. To a medium sized slow cooker, add in the vegetable broth, tomato juice, basil, oregano, carrot, celery, onion, mushroom, garlic and diced tomatoes.
2. Give it a stir and season with salt and pepper.
3. Cook on LOW for 7-8 hours with the lid on.
4. After 8 hours add in the pasta, cooking on HIGH for an additional 15-20 minutes, until the pasta is cooked.
5. Serve hot
